With the change in weather around here, I’ve been fighting some crazy allergies, hence I was unable to do my usual weekly posts! I wanted to give a quick shout out and say thank you to those who sent me sweet messages asking for more posts!

About this time last year, I started to develop a love for waffles. However, as my dad so graciously would point out every time I made waffles, I started to notice the insane amount of syrup that I used. Hey…sugar feels great in the moment BUT the crash afterwards isn’t so great, not to mention all the health concerns!
The problem was, I wasn’t ready to give waffles up – I loved them too much! Per a recommendation, I tried a store-bought keto waffle mix from a pretty famous brand – which shall not be named 🙂 Sadly, they were a huge FAIL! They definitely didn’t make the cut. To put it gently, they tasted like plants. Who wants waffles that taste like plants?!! They were neither tasty nor satisfying. I knew this wasn’t going to be sustainable. I made up my mind to find a homemade recipe. But, I needed the recipe to be quick, healthy, AND delicious. This isn’t always easy to find!
I searched and searched every website I could find. I looked up so many healthy waffle recipes. But some were too flat. Some were slimy. Some simply wouldn’t even cook properly and just became mush. After many failed tries and recipe adjusting, I’m happy to share what is, quite possibly, the BEST homemade, healthy waffle recipe. The best part? It takes literally 7 minutes or so! Not to mention, I’ve added in a bonus recipe at the end – a healthy, but equally delicious, alternative to syrup. Enjoy!
DELICIOUS & HEALTHY WAFFLES
Prep + Cooking Time: 7 minutes
Servings: Makes 2 standard-size waffles
You’ll Need:
- ⅔ cup of instant oatmeal or 2 packets of packaged instant oatmeal (I like the Quaker’s Maple & Brown Sugar flavor!)
- 2 bananas – the riper the better!
- 2 whole eggs
- Nonstick spray (I prefer to use a coconut oil cooking spray – available on Amazon!)
- Waffle iron (you can also use a nonstick pan if you prefer pancakes)
- Blender
- Knife
Directions:
- Pour the oats in a blender or food processor and blend for 2 minutes (this is the most important step! The recipe won’t work if you don’t do this first!)
- Cut bananas into slices and add to blender
- Add eggs to blender and blend for 1 minute
- Heat up the waffle iron and, after it’s hot, add a bit of nonstick spray
- Pour mix into a waffle iron
- Plate with some healthy fruit “syrup” (See below for recipe!)
- TIP: If you have some leftover mix, store it in the refrigerator for another day (anything longer than that will make it go bad!)
DELICIOUS & HEALTHY FRUIT “SYRUP”
(Great alternative for traditional syrup)
Prep + Cooking Time: 2 minutes
Servings: Makes 2 servings
You’ll Need:
- 3 medium strawberries – the riper the better!
- ⅓ cup blueberries – the riper the better!
- 1 tbsp raw honey
- Blender
- Knife
Directions:
- Wash fruits
- After removing stems, cut strawberries into slices
- Add strawberries, blueberries, and honey to blender and blend for 1 minute
- TIP: If the fruits are unripe, add a tad bit more of the honey to combat the sourness of the berries. You can store this in the refrigerator for upto 2 days!
